TAMALE PIE
1 chopped green bell pepper
1 small chopped white onion
1 clove of garlic chopped
1Lb hamburger meat
3 tbsp goya recaito
1 tbsp goya sofrito
2 cans pinto beans or 1 can pintos and 1 can black beans
Olive oil
1/2 cup green olives
1 package corn muffin mix
Sautè veggies in oil until translucent
Add Hamburger, recaito and sofrito. Cook until meat is browned. Add beans and olives last.
Spread mixture in bottom of a casserole dish.
Prepare corn muffin mix according to directions and pour on top of casserole.
For an optional touch, add cheese to top and bake at 350 for approximately 20 minutes or until top is golden brown.
